Ingredients

Basbousa

  • 1 cup Semolina

  • 1 cup Low-Fat Yogurt

  • 1/2 cup Unsweetened Applesauce

  • 1/2 teaspoon Bicarbonate Soda

  • 2 teaspoons Baking Powder

  • 2 tablespoons Peeled Whole or Sliced Almonds

Syrup

  • ¼ a cup of Stevia Sugar

  • 2 cups of Water

Preparation

To prepare the syrup

Put the sugar and water in a bowl. Mix until the sugar is dissolved then cook it on a stove on medium heat until it boils. Once the mixture boils, reduce the temperature then leave the syrup on the heat for 10-12 minutes until it thickens.

To prepare the Basbousa

  • Preheat your oven to 350°F (175°C) and lightly grease a baking dish.

  • In a bowl, mix the semolina with yogurt, bicarbonate soda, baking powder and the Unsweetened Applesauce until fully combined and pour the mixture into the baking dish.

  • Lightly score the mixture with a knife to mark the pieces into small squares.

  • Place the almonds on the surface of the mixture making sure they fit nicely in a square.

  • Bake for 25-30 minutes or until the top turns golden brown.

  • Once golden brown, remove it from the oven and immediately pour the cooled syrup evenly over the hot basbousa. Allow the syrup to soak into the basbousa for at least 30 minutes.

  • Cut the basbousa along the pre-cut lines, and serve it at room temperature.
